Stir Fried Tofu & Mashed Potatoes




This is a recipe that my mother always made when I was growing up. Some people get scared when they see tofu. I do admit that if I didn't grow up eating it, I would have a hard time to try it out, but this recipe is so tasty and healthy you just can't resist digging in! Enjoy!

Recipe yields to: Four servings

Stir Fry:
1 Zucchini sliced
1 Red pepper sliced
1 Large onion chopped
2 cloves of garlic crushed
1 14 oz. can of diced tomatoes
1 6 oz can of tomato paste
1 pack of firm tofu cubed
1 1/2 cups of water
1/2 tsp dried basil
Salt and pepper to season
1 tbsp olive oil
1 oz. of low fat shredded Muenster cheese

Directions:
Pour olive oil in a pot and put on a medium flame
Put in chopped onions and crushed garlic stir it for a minute
Add peppers, zucchini, and let it cook for ten minutes stirring and mixing it
Pour in diced tomatoes
In a separate bowl mix tomato paste and water until you have a smooth sauce
Pour in the sauce and add basil, salt and pepper
Make the flame high until you have it bubbling
Return to a medium flame and cover the pot, letting it cook for 20 minutes or until the veggies are soft
Add the cubed tofu
Let it cook for another 10 minutes
plate it and sprinkle some cheese on top

Mashed Potatoes

5 Yukon gold potatoes peeled and chopped
1/2 cup milk
1/8 cup chopped fresh dill
Salt and Pepper

Directions:

Put potatoes in a pot and fill with water to cover the potatoes
put on a high flame until the water is boiled
lower the flame a bit and keep the lid a bit open
10 minutes into cooking add fresh dill
after 20 minutes or when potatoes are soft drain the water
Using a hand blander or food processor whip the potatoes until they are creamy or pasty however you like the consistency
Add salt and pepper according to your liking
Add milk and mix in for more creamy consistency
Enjoy!

*I usually like eating the tofu and mashed potatoes with a scoop of cottage cheese on the side. I also eat the tofu with rice cakes or Melba toast!
*Another twist that I also tried was sprinkled Parmesan cheese on top of the tofu stir fry. DELISH!
